My Scout troop has linked up with an SA one (Troop 401 Helotes) and as our next troop night is March 2 I'm running it as a Texas themed one. What I'm after are some quick and easy Texas recipes the kids can do themselves (average age 11/12). Chicken-fried steak is going to be out but burritos and huevos rancheros will be good. Anything else simple they're not likely to have come across before?

You could have them make a big pot of chili. Texas style means no beans, though!

Here's one I found using Google: www.tasteofhome.com/Recipes/Corn-Bread-Topped-FrijolesYou can get really good, easy to make cornbread mixes. Don't know if you have Trader Joe's grocery stores over there, but they make one of their own that's first rate; even I can do it.

Frijoles:
Get yourself a big bag or two of pinto beans, soak them 8 hours in water (add more if necessary), pour off the water, pour on fresh water to cover and then some, bring them to a boil, add a bay leaf (make sure to discard it when the beans are done) and simmer them on low heat for maybe 3 hours. An hour before they're done, dice some onions and throw them in along with some black pepper. The beans are finished cooking when they are real soft. That's about all there is to frijoles. If you want to get fancy, when the beans still have an hour to cook, throw in a few deveined and deseeded hot peppers and/or some diced ham or bacon. If you're going to add salt, do not do so until the beans are done, or it will make them tough. Never hurts to throw in a little lemon juice, too.
If you want frijoles refritos, or refried beans, when the cooked beans are a day old, or at the least cooled down, heat some oil in a skillet, throw in the frijoles, and cook and mash them up till you have almost a paste. The oldtimers would laugh at the mention of oil; they'd use straight lard. 'Course, you don't want your Scouts' arteries getting prematurely clogged up.

Now that sounds real good and the recipes are a definite keeper, but its not really something I can get the kids to do in an evening. What we could really do is some kind of quick snack that'll help educate them that American food goes beyond Mickey D's and KFC.

Do you have tortilla chips and salsa over there? Throw some chips in a big microwavable dish, spread some salsa over them, top with some grated cheese (cheddar, muenster, or some mild variety), and microwave for a minute or so till the cheese starts to melt. Voila: nachos.
No salsa? Diced, drained tomatoes with some diced spicy peppers and diced garlic would do.

If you can find the stuff-A couple of cans of Old El Paso Refried Beans. Put in bowl, microwave for about 2 minutes. Get some tortilla chips and monterey jack cheese. Spread the beans on the individual chips, put on plate, then sprinkle the cheese over them, micro wave for about 60 minutes. Closest you will come to the original Del Rio/Acuna nachos. Just made some tonight!
